Lobster Mayo Rolled Sushi (Makizushi) 龙虾蛋黄酱巻き寿司




Lobster... you don't need to be a good chef to make a delicious meal with lobster because the taste of the lobster itself is superb! I never cook fresh lobster because I don't know how to handle the crawly creature. So I bought frozen cooked lobster for my convenience. 


Frozen cooked lobster. 

Looks BIG, but this little guy only have about 2 tbsp of meat. 

With so little meat, the best way is to make sushi. I used this to make lobster salad before, but it's really too little and too costly for a side dish. However, ONE lobster can only make 1 small rolled sushi (cut into 6 mini sushi), just enough to feed my little boy. That's why I said, this is the most expensive sushi I had ever made! :) But....he likes it a lot and says 'Mommy, please make this sushi for me everyday!' ...ME: speechless...lol...

(A)
1 Frozen Lobster (cooked, finely pull apart the meat, drizzled with some lemon juice/ lime juice)
1 Sweet Basil Leave (finely chopped)
*Japanese Mayonnaise 
*Salt
*Sugar 
*White pepper
(*Seasoning add to taste)

Sushi rice, I used half of the amount, refer Seasoned Sushi Rice or Plain Sushi Rice

Japanese Cucumber (finely sliced)
1 Roasted Seaweed (Nori)

Optional tools:
Rolled Sushi Mold
Bamboo Mat

Method:
1. In a clean bowl, mix all ingredients (A). Store in the fridge for 30 minutes.


2. Layer sushi rice on the sushi mold.



3. Add the fillings and layer with some sushi rice.



4. Cover and gently press on it. Remove the sushi roll and place on the roasted seaweed. Roll up and tighten with the bamboo mat.



5. Cut and serve immediately.
