Long Beans Omelette 豆角煎蛋


Everyone knows, eggs are nutritious and delicious if you know how to cook them. I include eggs in my everyday home-cooked meals...

As simple as a plain fried egg, my boy would eat it. Of course, there're some ways to make the simple plain fried egg delicious. You must know how to control the heat and when to heat up oil and pour in the egg, and not overcook the egg.

Ingredients:

4 Long beans (chopped into thin pieces) 

2 Egg

2 Cloves Garlic (chopped)

Oil for cooking

Pinch of Salt

1/2 tsp Soy Sauce

Method:

1. In a bowl, add soy sauce and egg, lightly beat egg and set aside.

2. Heat oil in a skillet, add garlic, and fry until fragrant. Add in long beans and salt. 

3. Stir-fry until the long beans are cooked. 

4. Pour the egg mixture over the long beans or alternatively you can add the cooked long beans into the egg mixture, mix well and pour the egg mixture back into the pan. Cook until the edges are set, flip over and let it cook through.
