Ingredients: 材料
1 Tomato (cut into chunks), sprinkle some sugar set aside
番茄 1粒,切块
2 Egg (add a pinch of salt, lightly beaten, do not overbeat the egg)
鸡蛋 2粒 (加一点盐,稍微打散)
1-2 Stalk Spring Onion (chopped, reserved some for garnishing)
青葱 1条,切碎
Sauce: 酱汁
About 1 tbsp Soy Sauce
酱油 大概1汤匙,自己试试味道再调味。
1/2 tbsp Sugar
细砂糖 半汤匙
1/2 tbsp Ketchup
番茄酱 半汤匙
Some Sesame Oil
麻油 适量
Some Water
水 适量

Method:步骤
1. Heat oil in a skillet, fry egg into big chunks until 'just cooked'. Remove from heat, set aside.
烧热油,把鸡蛋以大火快速煎至刚熟(半煎炒,可以看下面的视频参考做法)。离锅。
2. Heat oil in a skillet, add spring onion and cook until fragrant. Add in tomato. Stir fry until tomatoes are soft or until no more sizzling sound. Add sauce and cook on medium-low heat until the gravy started to thicken.
烧热油,加入一半的葱碎,爆香。加入番茄,炒至水份蒸发。加入酱汁,转中小火煮至酱汁开始浓郁。

3. Stir in fried eggs and combine. Cook for another 1 minute. Serve warm.
加入已煎好的鸡蛋,煮至收汁即可。
Tips: 小贴士
1. Fried egg with high heat. Do not overcook the eggs.
煎蛋要用热油,大火,煮至刚熟即可。煮太久的话,鸡蛋会变硬,就不好吃了。

2. Add some sugar to the tomato to make it less sour.
番茄切好后撒些细砂糖拌均,可以减少番茄的酸味。
3. If you like a "glossy" finish, stir in some corn starch solution (water + corn flour) to thicken the sauce.
