Strawberry Melon Pan 草莓味日式菠萝包



Japanese Melon Pan is one of our favourite bread I often bake at home. This strawberry flavour is specially made for my boy who loves PINK melon pan. The outer crust is strawberry flavour, and the soft bread is filled with sweet strawberry bits.

Melon Pan Toppings:

80g Cake Flour

1/4 tsp Baking Powder

25g Salted Butter

35g Icing Sugar

25g Egg

Some Castor Sugar

Tender & Tasty Pork Ribs Curry 香浓咖喱排骨 【简易家常食谱】



This tender and delicious pork rib curry is absolutely to die for! A comforting dish that goes well with steamed rice, You Tiao, noodles, bread or anything that you like. 

This isn't a new dish in my home cooking menu, I've started cooking non-spicy pork rib curry for my kid since 2015. Just that now I have advance gadget, I stop using conventional method that took longer cooking time, slow-simmering to tenderise the meat. Sharing on this blog post is a simplified recipe using Ninja Food, cooked in a much shorter time that yield flavourful and thick gravy with tender meat that fall-off-the-bones! How easy it that? Just place the ingredients into the Ninja Foodi pot and pressure cook the curry together with rice. It's so convenient cooking everything in the same pot. After cooking, just wash one pot and all the cleaning is done!




The Ninja Foodi that I'm using is a combination of a pressure cooker and air fryer in one appliance, it's super-efficient and time-saving. Besides pressure cook and air frying, there are other functions such as steam, slow cook, sear/ saute, bake/ roast, grill, dehydrate, sous vide, yoghurt and keep warm. Ingredients:

600g Pork Ribs

70g Curry Paste

200g Water

1 Onion

1 Potato

100ml Coconut Milk

Marinade:

1 tbsp Tapioca Flour

1 tbsp Meat Curry Powder

1 + 1/2 tbsp Curry Paste

1 tbsp Light Soy Sauce

Method:

1. Combine the pork ribs with the marinade ingredients, let marinate for an hour or overnight. Place marinated pork ribs, curry paste and water into the Ninja Foodi pot, pressure cook for 30 minutes (Quick Pressure Release).

2. Add onion, potato and coconut milk. If cooking with rice, use the reversible rack and place the rice on top. Rice and water ratio is 2:3. Pressure cook in Ninja Foodi on high for 10 minutes, natural pressure release. Serve warm and enjoy! 

After cooking the curry and rice, I air-fry some You Tiao using Ninja Foodi AirCrisp function, this tastes excellent with the curry sauce.

Miso Pork Rice 和风味噌肉片焖饭 【Rice Cooker Recipe】



This savoury umami-packed miso pork rice is easy to cook, added mushrooms, potatoes, and Edamame to make a complete meal in one pot!


Ingredients:
Yield 3 servings

140g Pork


1 tbsp Garlic


4-5pcs Button Mushroom


1 cup Rice


1 +1/2 cup Chicken Broth


1 tsp Dashi Powder


1 Potato


Handful of Edamame


1 tbsp Sweet Soy Sauce


1 tbsp Sesame oil 



Marinade:


1 tsp Tapioca Flour


1/2 tsp Sesame Oil


1 tbsp Light Soy Sauce


A dash of White Pepper 


1 tbsp Miso Paste


2 tsp Mirin


2 tsp Sake

Method:

1. Combine marinade and pork, and let marinate for an hour. Heat some oil in the rice cooker's inner pot, stir fry garlic until fragrant, add in mushrooms, season with a pinch of salt and pepper, stir fry for a minute, and set aside. 


I'm using Song Cho IH rice cooker which comes with a stainless steel inner pot that can be used on an Induction cooker. Alternatively, you can stir fry the ingredients using the rice cooker <STEAM> mode.


2. Add chicken broth and dashi powder into the pot, and mix well. Add in rice and top with marinated pork, mushrooms, and potatoes. 


3. Select <RICE> <STANDARD>, let it cook until the cooker's timer starts to count down, add edamame. 




4. When the cooking has completed, stir in the mixture of sesame oil and sweet soy sauce, and serve warm.

Air Fried Crispy Black Pepper Chicken Wings 黑胡椒鸡翅【免油炸】


We love everything with black pepper, this is one of our favourite black pepper recipes. Marinated with black pepper spices, these chicken wings are infused with so much flavour, very aromatic and tasty. Preparation is simple, just marinate the wings and throw them into the Ninja Foodi. The Ninja Foodi would cook the food with a delicious golden crisp finish and juicy inside with minimal oil used.

8 Chicken Wings


Marinade:


2 tbsp Corn Flour 


1 tbsp Sesame Oil


4 tbsp Black Pepper Spices


2 tbsp Abalone Sauce

Kimchi Stew aka Kimchi Jjigae 韩式泡菜豆腐汤




Kimchi Stew aka Kimchi Jjigae is one of the most common stews in Korean cuisine. It's hearty, warm, and comforting to eat this anytime any day. 

Ingredients:

150g Kimchi


1 large Onion


1/2 can Luncheon Meat


1/2 pkt Korean Fish Cake


8pcs Crab Stick


1 small block Tofu


Optional:


1 Noodle


1 slice Cheese


Rilakkuma Fish Cake 


Seasoning:


150g Sweet Sauce


1 tbsp Gochujang 


Some Salt/ Soy Sauce, add to taste


Hot Water (and some kimchi juice)


Note: This recipe is customized for my boy, it's kid-friendly and mildly spicy. If you like traditional kimchi stew, do adjust the seasonings accordingly.

1. Pan fry luncheon meat, set aside. Saute onion and kimchi, add seasoning and water, bring to a boil, and simmer for a few minutes.
