Cute Bear Milo Pancakes 可爱熊熊美禄松饼




It's been a long time I never make pancake art because the boy has taken over the morning chores preparing breakfast. When he was busy with HBL,  it's my turn to play with food :D  Transformed the pancakes into adorable bears, they're soft and yummy bear pancakes!

HBL: home based learning (during COVID19 outbreak circuit breaker)




Made some Milo pancakes to clear the going-to-expire Milo packet drinks and the unsweetened Milo powder aka Milo kosong that I wrongly bought. Yeah, it happened when ordering groceries online especially when I need to secure the delivery slot after midnight >.<  


Ingredients: 
材料

Recipe adapted from The Simplest Pancake Recipe

1 cup Self Raising Flour 自发粉 1杯

2 tbsp Unsweetened Milo Powder 美禄粉 2汤匙

1 cup Milo (from packet) 美禄饮料 1杯

1 Egg 鸡蛋 1粒

Pinch of Salt 盐 少许

1 tbsp Coconut Oil 椰子油 1汤匙

Optional: 2 tbsp Sugar  糖 2汤匙,也可以不放

Method: 步骤

1. In a bowl, lightly whisk egg. Add milo, salt and sugar if using. Stir in flour and Milo powder. Mix till no more lumps. Stir in oil, mix well.
鸡蛋打散,加入美禄饮料,盐和糖,拌均。加入自发粉和美禄粉,拌均。加入油,拌均。






2. Wipe some oil in a non-stick pan. Add a ladle of batter, cook until bubbles appear on the pancakes, flip and cook till golden brown. Serve right away. Leftover can be kept frozen, reheat in microwave before serve.

Stir Fry Pork With Shrimp Paste 虾酱炒肉片


Quick and easy Stir Fry Pork With Shrimp Paste, a flavourful and delicious dish to go with rice. This recipe was adapted from an old recipe that I found in my mom's collection, modified a little to make it kid-friendly for my boy who doesn't eat spicy food. 



Ingredients: 材料

250g Pork (shabu-shabu/ sliced thinly) 猪肉片 250克

1 Onion (white or red) 洋葱 1粒

1-2 Red Chili, sliced 红辣椒/指天椒 1-2 条
(use chili padi/ bird's eye chili for spicy version)

3 cloves Garlic, chopped 蒜头 3 瓣

Some oil for cooking 油 适量

Marinade: 腌料

1 tsp Tapioca Flour 木薯粉 1小匙

1 tsp Sesame Oil 麻油 1小匙

1 tsp Shrimp Paste/ Prawn Paste 虾酱 1 小匙

1/4 tsp Sugar 糖 1/4小匙

1/4 tsp Oyster Sauce 蚝油 1/4小匙

Sauce: 酱料

1 tbsp Shrimp Paste/ Prawn Paste 虾酱 1 汤匙
(use 1.5 tbsp if you like it more flavourful 喜欢重口味的可以用1.5汤匙)

1.5 tbsp Sugar 糖 1.5汤匙

1/2 tsp Corn Flour 玉米粉 1/2 小匙

Some Water 水 适量

Optional: Coriander for garnishing 芫荽 少许点缀

Method: 步骤

1. Mix pork and marinade ingredients, marinate for 1 hour. 
肉片加入腌料,腌制1小时。





2. Heat oil, stir fry garlic and onion till fragrant. 
烧热油,爆香蒜头和洋葱。





3. Add in pork, stir fry till half cooked. Stir in chili and sauce.
加入肉片,炒至半熟。加入辣椒和酱料。

Note: For spicy version, use bird's eye chili, fry the chili with garlic to bring out the flavour. 






4. Simmer till the pork is cooked through and sauce is thicken. Garnish with coriander and serve warm with rice.

Crispy Air Fryer French Fries 免油炸薯条



During circuit breaker, we have to stay at home. Our favourite MCD was closed, when we order fries from food delivery, it usually turned out oily and soggy. So when we crave for french fries, we have to DIY.  I usually cooked fries using my air fryer. This time, I tried using Ninja Foodi, it's faster than my old air fryer and the fries turned out very nicely golden and crispy! With this Ninja Foodi at home, I guess my air fryer can retire already.... :D 



Made some crispy french fries for the kid to snack during HBL (home based learning).
These french fries were cooked from frozen, just 15 minutes,
using Ninja Foodi Air-Crisp function, the fries turned out so crispy.

Note: I'm making small portion, so I shorten the cooking time to 15 minutes. Stir/ toss the fries once (halfway cooking). If you're making bigger portion, follow the cooking time in the recipe booklet that comes with the Ninja Foodi package. 



Preheat Ninja Foodi for 5 minutes, cook the fries from frozen.

Nicely golden and crisp after 15 minutes.

Brown Sugar Boba Pearls/ Tapioca Pearls Bubble Tea 波霸/黑糖珍珠奶茶做法/食谱



Few days back, the boy told me he won a cup of bubble tea from an online quiz but he can only redeem when school re-open after 1 June (if Circuit Breaker ended by then...). 

He has been talking about the bubble tea since then and said he really wish he could have it now. Lucky him, I have bought a packet of Okinawa brown sugar few weeks back. So I told him to make his own and he did it!....well, actually WE did it :D ... The texture and taste is perfect, except the shape is not perfectly round.



It's totally fine if it's not in perfect round shapes...
DIY with kid, what do you expect ?! :D

School reopened but bubble tea shop remain closed :D
The boy insisted to make another batch of boba pearls LOL..
This was for me, he made his own with just brown sugar boba pearls and milk.

Ingredients: yield 3-4 servings, depends on how much you served in each cup ;)

Tapioca Pearl Ingredients:
珍珠材料

90g Water 水 90克

65g Dark Brown Sugar 黑糖65克

130g Tapioca Starch 木薯粉 130克
(more for coating)


Brown Sugar Syrup Ingredients:
黑糖浆材料

75g Dark Brown Sugar 黑糖 75克

100g Water 水 100克

I used this brown sugar from Japan. It has deep and rich flavour.

Method:
步骤

Prepare Tapioca Pearls:
准备黑糖珍珠

1. Heat water and sugar in a saucepan, cover with a lid and bring to boil. Stir in half of the flour to form a soft dough. Remove the saucepan from heat, add in the remaining flour, stir to combine. Transfer the soft and sticky dough onto worktop, dust with some flour and knead to form a pliable dough.
水和糖煮滚,加入一半的粉,拌均后离火,加入剩余的粉,揉成面团。

2. Roll out the dough, cut into small pieces and roll into small balls. 
把面团切小,搓圆。沾上粉。


This rolling part is quite tedious, let the kid do it with you! :D 
Make sure to coat each pearl with flour to avoid sticking.
To do this, just sprinkle some flour into the bowl and gently shake the bowl.

3. Bring a large pot of water to boil, add in tapioca pearls and cook for  about 12-15 minutes. When it's done, transfer the pearls into cold water.
煮滚一锅水,加入黑糖珍珠,中火煮大概12-15分钟,捞起浸泡冰水。





4. Meanwhile, prepare the syrup. Heat sugar and water, bring to boil. Add in cooked pearls and simmer for 5 minutes or till slightly thicken. When it's cooled, serve with cold milk, ice milk tea, ice coffee etc... Enjoy!

Tomato & Plum Sauce Chicken 梅酱茄汁鸡



Crispy chicken chunks coated with sweet & savoury sauce. This dish is very appetising and loved by both adults and kids.

Ingredients:  材料

200g Chicken Meat 鸡腿肉 200克, 切块

1 Tomato, cut into chunks 番茄 1 粒

2 cloves Garlic, sliced 蒜头 2 瓣,切片

1 Onion, cut into chunks 洋葱 1 粒,切块

6pcs Spring Onion (white part) 青葱 6 (白色部位)

1 tbsp Castor Sugar  细砂糖 1汤匙

Some Potato Starch 马铃薯粉 适量

Some Oil for cooking 油 适量

Marinade: 腌料

1/2 tsp Corn Flour 玉米粉/粟粉 1/2 小匙

1/2 tsp Garlic Salt/ Salt 蒜盐/ 盐 1/2 小匙

Dash of White Pepper 胡椒粉 少许

1/2 tsp Shao Xing Hua Tiao Wine 绍兴花雕酒 1/2 小匙

Sauce: 酱汁

2 tbsp Plum Sauce 酸梅酱 2汤匙

1 tbsp Ketchup 茄汁/蕃茄酱 1汤匙

1/2 tsp Soy Sauce 酱油 1/2小匙

Method: 
步骤

1. Mix marinade with chicken, let marinate for 30 minutes. 
腌料加入鸡肉,拌均后腌制30分钟。




2. Coat chicken with potato starch, shallow fry/ deep fry till golden and crisp, set aside.
鸡肉沾上马铃薯粉,炸至金黄色/ 熟透。




3. Pour away the oil, reserve about 1/2 tbsp in the pan. Add in garlic, onion and spring onion, stir fry till fragrant. Add in tomato and sugar, stir fry for a few seconds.
锅里留少许油,把蒜头,洋葱和葱爆香。加入番茄和糖,翻炒。




Additional Note: Before cooking the sauce,
add some water in the sauce to dilute the thick plum sauce.





4. Add in sauce, bring to boil. Toss in chicken and serve right away.

Quick & Easy Pressure Cooked Roast Chicken 快速高压烤鸡



Tried roasting a whole chicken using pressure cook + air fry method. Started with "Pressure Cook" mode to cook the chicken, followed by "Air-Crisp" to crisp up the skin and enhance the colour and flavour. 

Verdict: The overall result was satisfying. I'm using a small chicken which is just nice for family of 3. The cooking time is 8 minutes on high pressure, finished up with 8 mins air-crisp. In just 16 minutes, the chicken is cooked through to perfection. Compared to baking in oven which usually required 40-50 minutes baking time, this method is quicker and the meat turned out to be more moist and tender.

1 Small Chicken (about 1kg)

Marinade:

1.5- 2 part Light Soy Sauce 
(adjust the amount based on the saltiness of soy sauce)

1 part Sugar

1 part Mirin

1 part Sake 

1 tsp Sesame Oil 

Pinch of Garlic Pepper

Optional: add some dark soy sauce if you like darker colour

Method: 

Marinate the chicken overnight. Reserve the marinade, follow the steps in the video to cook the chicken. 


Note:  

- This cooking time is based on 1kg whole chicken (at room temperature). If you're using larger chicken/ frozen chicken, do adjust the cooking time accordingly. There's a guide in the recipe book for standard size roast chicken, you may refer to that. 


After 8 mins pressure cook + 8 mins air crisp, the internal temperature is above 75'C.
If you're using large chicken or frozen meat, do increase the cooking time.

- Many have asked me if this cooker is easy to clean. YES! it is easy to clean. After I removed the chicken from the pot, I let the pot cooled for few minutes, then poured some water to soak the Cook & Crisp basket in the pot. I took a video (refer to the video below the recipe video) to show how easy to rub off the residue. So basically after used, just soak the pot for a while and wash off with a sponge with dish detergent. Use a tooth brush/ small brush to clean the bottom of the Cook & Crisp basket. ;)
