Peanut & Lotus Root Pork Ribs Soup 莲藕花生排骨汤-增强免疫力,补血养颜




This is the soup I had been drinking since I was a small girl. Mom cooked for us but a little different from what I'm sharing here because mom's soup always have dried cuttlefish/ squid that I usually omit. I seldom use dried seafood in my cooking because I don't like to store them in my kitchen/ fridge. Simply because I hate the smell of it! >.<




Ingredients: (Yield 2-3 servings)



250g Pork Ribs

2 sections Lotus Roots (peeled and cut into chunks)

Handful of Peanuts (soaked and drain)

1 Dried Fig (US)

5 Seedless Red Dates

3-4 Yu Zhu 玉竹

Some salt to taste

Method:

1. Rinse the ribs with hot boiling water. Transfer to a pot. Add in the rest of the ingredients except salt.




2. Add 2L hot water, bring to boil. Cook with high heat for 30 minutes. Reduce heat and simmer for 60 minutes.

3. Add salt to taste, cook another 30 minutes. Serve warm.
