Cereal Prawn

Photo updated 6 July, 2017.

Can you spot the prawn? Or just cereal? That's the way I like it....

Photo updated 6 July, 2017.

This was my simplified recipe without the need of deep frying the prawn. Just pan fried with very little oil until crisp. This whole plate of cereal including the curry leaves were all crispy.

Ingredients:

A small bunch of Curry Leaves

20g Unsalted Butter
(use 35g - 40g if you love it more buttery. You may adjust to your own preference.)

1 tsp Red Chilies/ Bird's Eye Chilies (chopped, optional)

Some chopped spring onion for garnishing

Seasoning: 调味

3/4 tsp Salt

1 tbsp Beaten Egg

1 tbsp Plain Flour

Dash of White Pepper

3/4 cup Cereal (about 40g) 麦片 40克

1 1/2 tbsp Milk Powder

1/2 tbsp Sugar

1/2 tsp Salt

Method: 步骤

1. Clean and dry the prawn with kitchen towel. Add in seasoning, mix well.

2. Heat some oil in a skillet, add in prawns. Pan fry both sides until crisp and cook through.

3. Remove from pan.

4. Reduce heat to low, melt butter in the same skillet. Add in curry leaves. You may add some chilies, if using. Fry until fragrant.

5. Add cereal mix, mix well.

6. Add prawn, stir to coat. By now the cereal should be golden brown and fragrant. Add some chopped spring onion and serve warm.
